1 pound of potatoes, peeled and cut into slices
1 cup of fresh or frozen peas
1 tablespoon of unsalted butter
1 cup of milk
1 tablespoon of all-purpose flour
Salt and pepper, adjusted to taste
Instructions:
Prepare the Potatoes: Place the sliced potatoes in a large pot and cover with water. Bring the water to a boil and continue to cook until the potatoes are tender to the fork's touch, about 15-20 minutes. Once cooked, drain and set aside.

Cook the Peas: In a separate pot, simmer the peas in water for about 6-7 minutes until tender. Drain and set aside.

Create the Roux: In the same pot, melt the butter over medium heat. Stir in the flour to form a smooth paste, cooking for a minute to remove the raw flour taste.

Form the Cream Sauce: Gradually whisk in the milk to the roux, continuing to stir until the mixture is slightly thickened. This creates the creamy base for your dish.

Combine and Simmer: Return the drained potatoes and cooked peas to the pot. Season the mixture with salt and pepper to taste. Gently simmer everything together for about 5 minutes, allowing the flavors to meld.

Serve Warm: Remove the pot from the heat. Serve the Creamed Potatoes and Peas warm as a comforting and hearty side dish that's perfect for any meal.
